Healthy alternatives to potatoesI love potatoes and all things potato. For me, giving up potatoes for the first few weeks of my diet was super hard. Luckily, I found some healthy alternatives to potatoes that tasted great and were low carbs.

Mashed cauliflower is a great healthy alternative to mashed potatoes.  You steam the cauliflower or heat it up in the microwave and mash it up using skim milk and a little Promise butter. It’s low in carbs and high in nutrients. It really doesn’t even taste like cauliflower. You can even add a little garlic or pepper to taste.  Mmmm good.

What about a healthy alternative to potato chips? Try kale chips. I don’t like the taste of kale at all but I love kale chips.  Take some leaves of kale and toss them with olive oil, salt and and a little vinegar.  Put them in the oven at 350 degrees for about 5 minutes.  Much, much better for you and they are good. Trust me, try them!

Do you like hash browns? I do! But I also like squash browns.  Take some butternut squash, grate them like you would a potato.  Add a little egg and some low carb bread crumbs.  Pan fry them in olive oil and you have a healthy alternative to hash browns! Try it mashed for another healthy alternative to mashed potatoes!

French fries are the worst potato derived food, in my opinion. But they are oh so delicious.  So are sweet potato fries! Sweet potatoes are packed with beta-carotene and have lots of Vitamin A in them. Cut them up into fries, put them in the oven and you have a delicious, healthy alternative to french fries! I add just a little honey to them after they are done.

Potatoes are one of my favorite foods! I have been wanting to try the cauliflower just to see what it tastes like.
