I love yummy weight loss recipes and this one in particular is quick and easy to prepare and only 30-45 minutes cooking time depending on the type of chicken pieces you choose or have on hand.
Sometimes the creative cooking fairy comes to visit and I just have to cook whatever recipe I feel like cooking or dream up. Last night was the night and as a result a new and different recipe was born at our house.
For this meal I used organic yogurt, Dijon mustard and free range chicken drumsticks as that’s what I had in the fridge and pantry. Feel free to make your own choice of organic, free range or not.
Ingredients
- 3 tblspns organic low fat yogurt
- 2 tspns organic Dijon mustard
- 1 tblspn seeded mustard
- 1 tspn tumeric
- 2 cloves garlic
- ½ tspn smoked paprika
- 4-5 drops Tabasco (or a chilli) sauce
- 1 tspn olive oil or cooking spray
- Tin Foil
- 4 pieces of chicken drumsticks, thighs or breasts
Method:
Place the yogur
t, both mustard’s, finely chopped or crushed garlic, smoked paprika, turmeric, Tabasco sauce in a bowl and stir to combine.
Add chicken pieces and coat with the yogurt mixture.
Once coated place chicken into a oiled or sprayed baking dish and cover with the tin foil. Place into a 350F or 170C oven and cook for 20 minutes for chicken breasts or 30 minutes for the drumsticks or thighs.
Turn chicken and remove foil and bake for a further 15 minutes or until brown on top.
Serve with your favorite vegetables or salad.
This is one chicken recipe that I will definitely cook again, I’ve added it to my favorite weight loss recipes!
